1) Don’t worry about not having a spaetzle maker, traditionally spaetzle dough is spread out on a cutting board, cut into strips with a knife and dropped into the boiling water as you go.
2) Over kneading your dough can cause it to become tight and more difficult to roll out later. Gently knead your pastry dough for only about five minutes, then let it rest for about an hour before rolling it out.
